Fresh Pineapple With Frozen Berry Sauce
1 ripe pineapple
(peeled, cored and cut into chunks)
1 package (10 ounces each) frozen raspberries
Sliced strawberries thawed
Sugar to taste
2 tablespoons orange juice or orange liqueur
Mint leaves for garnish

Puree the thawed fruit, then pass them through a sieve to remove the raspberries seeds. Stir in sugar to taste if need be with orange juice or liqueur.

Set a clump of chopped pineapple in the middle of each dessert plate: drizzle sauce around the pineapple and garnish with mint leaves.

Raspberry Champagne
Scant 4 ounces Champagne
1/2 ounce Framboise
Frozen (not in syrup) raspberries

In a champagne glass pour chilled champagne. Carefully pour Framboise down the inside of the glass. Add 2 or 3 frozen raspberries.

Short and sweet.
